Fun Fact: Cassava is known to be high in calories at 191 calories per 100 grams however did you know that 100 grams of cooked cassava root contains 18 mg of vitamin C, 20% of the recommended daily amount.

In recent years Palm Oil production has gotten some negative public opinion, and rightfully so. In many areas around the world expanding palm oil production has been known to degrade the environment. This has caused a loss of habitat and biodiversity for many species in tropical forests.
However it's important to note that palm oil has the highest oil productivity per hectare of any other oil producing plant, this is followed closely in second place by coconut oil. This means that a smaller area of land is needed to grow oil palms as compared to an equivalent area needed for any other vegetable oil production such as sunflower oil or rapeseed oil.
Unrefined red palm oil is a rich source of vitamins and anti-oxidants including vitamin A and beta-carotene. Known as "Zomi" in the areas of West Africa where it is consumed, Red Palm Oil is a culinary delicacy and adds that "spicy kick" to whatever dish you are preparing.
